Only if you ask and agree the scope first. The usual approach is that the family goes through anything that might hold papers or valuables, and the crew loads what the family has released.

Yes, and it often does. Tell the contractor about lockbox access and showing times so the crew is not in the house during a showing.
What if the family lives out of state?
Say so when you call. Many contractors will walk a family member through the house by video call before quoting, then work from a key or lockbox.
